Hailing straight from the Iberian Peninsula, the Black Iberian Pig produces what is considered to be the best pork in the world, the Iberico Pork.
On a special diet, the piglets are fed barley and maize for several weeks. They are left to roam the pasture, the pigs feed naturally on grass, herbs, acorns, and roots, until they are of right size and age. From these natural sources especially a feed of acorns, the meat is healthier and tastes special.
At iMiirage, we serve the Iberico Pork in several styles, not forgetting our Char Grilled with Middle Eastern Spices Black Iberico Pork (Secreto) which oozes a wonderful texture and rich flavour in each bite; of course paired perfectly with a portion of Risotto Gateau and Mixed Green Salad.
The Japanese Cow or more commonly named Wagyu is known for its quality. It produces a very high percentage of oleaginous unsaturated fat and is in high demand.
Offering an alternative to the steaks which are famously served here at iMiirage and across the world, uses a rarely used cut in our dish: Red Wine Braised Chilled Wagyu Beef Cheek “Bourguignon” with Wild Mushroom and Smoked Bacon paired with Tagliatelle, a traditional type of pasta from the Emilia-Romagna and Marche region.
Tender, melt-in-your-mouth, and extremely tasty with its exquisite flavours bursting to perfection will leave you wanting more!
Farmed largely across Europe, the Turbot is a commercially prized fish and is highly sought after especially for its extremely delicate flavour. It is also known as the “King of the Fish.”
The flat fish has a whiter and meatier topside flesh portions and is most commonly baked, poached, steamed or pan-fried. When dining with us, try a very tangy, fresh, and succulent Roasted Atlantic Turbot with Sea Salt and Lime.
Some early Roman poetry has suggested that the Turbot fish is fit for kings!
A product of cross-breeding between the Dorset Horn and Blackhead Persian sheep, the Dorper lamb was originally created by the South African Department of Agriculture to breed a meat-sheep suitable to the drier parts of the country.
Now farmed in other areas as well even as far as Australia and New Zealand, the Dorper lamb has become a more favourite choice of meat around the world.
At iMiirage, every Chilled Dorper Lamb Rack Chops (Australia) grilled perfectly to medium-well, keeping it succulent and locking all the flavours especially while dining with the sides of a Vegetable Medley garnished with Crispy Prosciutto and Masala (Fortified Wine) Reduction!

Pasta and Risotto
In case a hearty craving for Italian flavour arises, our selection of pasta and risotto scoured from the corners of Italy is there to satisfy you.
We feel that for a more flavourful encounter, you might enjoy the Tagliatelle with Smoked Bacon and Balsamic Vinegar, created personally by Chef Peter.
A lighter and healthier option would be our Fennel and King Prawn Risotto in White Wine Olive Oil and Shaved Parmesan would hit the spot perfectly.
All our desserts are homemade with freshness and an indulgent kind of love and with your sweet-tooth in mind.
For instance, our Tiramisu takes a very unique approach while maintaining the extremely distinctive taste of the traditional variation.
